I don’t have a picture of this item I am discussing today, because I haven’t made it yet. But, I will be making it later for Valentine’s Day dinner. We are taking a budget challenge for the next few months. The goal is to reduce our grocery bill by at least half if not more. We are taking a trip this Summer, and my son is getting married so we need to save lots of extra money. The food budget is definitely the easiest way to save extra money. I will post more about this in a few days.
I am making strawberry banana bread for our dessert this eve. I am not a Valentine’s Day person. I could really care less. It is just another excuse to waste a ton of money. But, my hubby loves sweets and I just happen to have overripe bananas and some strawberries. The recipe I will be using can be tweaked to meet your needs. If you have CKD like me, then you may want to eliminate the bananas or use less. I don’t have issues with potassium so I use a lot. Use 1/4 cup of unsweetened applesauce to replace oil and or eggs. You can also use whole wheat flour, but for people with CKD white flour is the best option as it has less phosphorus. If you don’t have unsweetened applesauce then don’t add the sugar. Also, be sure and use unsalted butter if you have CKD, Heart Disease, or High Blood Pressure.
